Eggless, Peanut Butter Chocolate Chip Cookies

Ever crave a salty, sweet and chocolatey treat, that also pairs well with coffee? Cannot just be me! These cookies are exactly what you need!

They are simple to whip up, incredibly tasty, and definitely won’t last very long in your cookie jar!

Eggless, Peanut Butter Chocolate Chip Cookies

3/4 cup soft butter

3/4 cup sugar

1.5 tsp vanilla

1.5 cup flour

1 tsp baking powder

1 tsp baking soda

2/3 cup peanut butter

1/4 tsp salt

1 cup chocolate chips

Preheat your oven to 350 degrees

Whip together the softened butter and sugar until fluffy. Add in the vanilla.

Add in all of the remaining ingredients, except the chocolate chips. Mix everything until well combined.

Add in chocolate chips at the end. I used a combination of milk and semisweet.

Scoop out the mixture and place each round on a parchment lined baking sheet. Press lightly on the tops to flatten slightly.

I made very large cookies, of about 1.5-2 tbsp. and the mixture yielded 14 cookies. You could easily make cookies half that size. The cookies will spread significantly while baking, so don’t crowd the pan!

Bake for 10-12 minutes, until slightly browned. Cookies will be very soft when they are removed from the oven. They will solidify as they cool.

    Yum- these sound terrific! Do you let them cool on the parchment papered pan since they’re so soft, or remove to a wire rack?

    1. Thank you! I leave them on the parchment papered pan for several minutes until they harden. Then they are safe to move to a wire rack.
