Often as I’m walking the aisles of the grocery store, I tell myself I’m going to be a good mom and buy only healthy snacks that are less processed and loaded with good nutrients. This usually lasts until I see the prices of some of these snacks. Six dollars for a handful of roasted chickpeas? No thank you! I’ve got a lot of mouths to feed, so that’s not a great option.
I decided to try making my own one day, and over a few attempts, managed to come up with a pretty tasty homemade version!
Easy Roasted Chickpeas
1 can chickpeas, drained
1 tbsp olive oil
1 1/4 tsp seasoning salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp chilli powder
1/4 tsp cumin
1/2 tsp flour
Drain your canned chickpeas, and place them in a medium bowl. Use a paper towel or tea towel to dry them a bit. This action will usually remove the skin of the chickpeas. You can discard those or leave them, whatever you prefer. I personally like the way the skins crisp up.
Next, drizzle the olive oil over the chickpeas.
In a separate bowl, mix all of the spices, except the flour, and sprinkle that in too. I usually do a tsp at a time, so as not to over season. You may not need all of the spice mixture for your taste.
Using your hands or a spoon, toss until evenly coated.
Sprinkle the flour over top, and mix again.
Lay the coated chickpeas on a cookie sheet, and toast at 375 degrees for approximately 40 minutes.
