I’m enjoying the no-knead bread experience. It’s new to me, but it’s a lot of fun. Creating delicious bread with minimal effort, and waking up to a bowl of ready to bake dough, is perfect. I decided I wanted to make a savoury version to pair with the pasta dish I had planned this week. The results were amazing!
This recipe is very similar in proportions and technique to my previous no-knead brown seeded bread recipe. If you are interested in that version, be sure to check it out!
Savoury No-Knead Bread
- 1 1/2 cup warm water
- 1 tsp traditional yeast
- 1/2 cup green olive brine
- 2 1/4 cup all purpose flour
- 1 tsp salt
- 2 tsp sugar
- 1 tsp onion flakes
- 1 tsp garlic flakes
- 1 tsp dried parsley
- 1/2 tsp red pepper flakes
Add the traditional yeast to the warm water, and allow to bloom.
Mix the dry ingredients together in a bowl.
Once the yeast has bloomed, add in the brine.
Add the wet ingredients into the dry, and stir until fully incorporated.
Cover with plastic wrap and allow to rise for approximately 12 hours.
When the dough is ready, place your Dutch Oven or covered pot into a cold oven, and preheat to 425 degrees.
Form a loaf with your dough, using as much flour as needed, and place it on parchment paper.
Very carefully place the parchment and dough into the preheated Dutch oven.
Bake for 30 minutes with the lid on, and 20-25 minutes with the lid off.
Carefully tap the bottom of the loaf. Loaf should sound hollow when fully baked.
Allow to cool before cutting into it.
This beautiful, savoury loaf with a subtle spice, pairs well with pasta dishes and soups. The brine and dried spices give fantastic flavour to this effortless bread.
