It’s a cold one here today, and I decided the kids and I would just have a nice, cozy day inside. What better to do on days like that than bake cookies! We opted for these delicious oatmeal chocolate chip cookies. They are one of my favourites, since they are large, soft cookies, with chocolate and a bit of texture. They pair especially well with a hot cup of joe!
In the recipe below, I listed the chip/nut mixture that I used, but you can use what you have. I used mostly semisweet, along with a few dark chips and peanut butter chips (amazing peanut butter flavour!), and a sprinkle of almonds on top of some.
Eggless, Oatmeal and Chocolate Chip Cookies
- 1 cup butter
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 1 1/2 vanilla
- 1 3/4 cups quick cooking oatmeal
- 1 1/3 cups all purpose flour
- 3/4 tsp salt
- 1 tsp baking soda
- 1/4 cup water
- 1 cup semi sweet chocolate chips
- 1/4 cup large dark chocolate chips
- 1/4 cup peanut butter chips
- 1/4 cup almonds
Preheat oven to 350 degrees
Cream together the butter, vanilla and sugar
Add in all dry ingredients, except your chips
Add in water and mix until a thick dough is formed
Add your chip/nut mixture
Form balls approximately two tbsp each, and place on a lined cookie sheet. I got 15 large cookies, but you could make them smaller
Sprinkle with almonds if you’d like
Bake for 12-15 minutes, until golden
Cookies will feel soft. Allow to cool and they will firm up
These cookies are delicious. The kids really enjoyed them. They also freeze well.
