Anyone who knows me, knows that I love chocolate. It is my go-to snack for any occasion. Naturally, on day two of owning a waffle maker, I had to start experimenting with a chocolate variation! Since finding this perfect combination, which is rich in chocolatey flavour, while being crisp and fluffy, I haven’t looked back! It is the perfect breakfast or dessert that feels decadent and rich. These can be made vegan by using non-dairy milk and chocolate, without sacrificing any flavour! Add syrup, Nutella, berries, powdered sugar or ice cream to jazz it up further. Extra points added for every member of the family eating it, even the pickiest one!
Makes approximately 5 large waffles
Fluffy, Eggless, Chocolate Waffles
- 2 cups of all purpose flour
- 4 tsp sugar
- 3 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3 tbsp cocoa
- 2 cups of buttermilk or 2 cups of milk + 2 tbsp of vinegar (can use non-dairy substitute + vinegar)
- 1 tsp vanilla
- 3 tbsp melted coconut oil (melted butter would work too)
- 1/4 cup melted dark chocolate
Turn on waffle maker and allow to preheat. Spray with non-stick spray or coat with oil.
Melt coconut oil and chocolate together on stovetop or in microwave, stirring periodically.
Combine all dry ingredients in a large bowl.
Combine all wet ingredients in a bowl.
Add oil and chocolate combo into wet ingredients, mixing vigorously so the chocolate doesn’t seize up. Add wet ingredients into dry ingredients, mix. Batter will be slightly thick, which is fine. If the chocolate doesn’t fully incorporate into your liquid, thats fine too, just take extra care to mix the batter well!
Ladle onto waffle maker and allow to cook until your desired consistency is met. Soft and fluffy waffles take approximately 5 mins on most machines, while crispier waffles take approximately 8 mins on most machines.
